Bone Suckin’® Black Eyed Peas Recipe

Ingredients
- Bone Suckin’ Habanero Sauce, 2 tsp.
- Dried Black Eyed Peas, 2 cups
- Water, 2 quarts
- Apple Cider Vinegar, ¼ cup
- Yellow Onion, 1 large, diced
- Red Pepper, ¼ cup, diced
- Country Ham Slices ¼ cup, diced
Instructions
- Place dried beans in a stock pot and cover with water. Let beans sit overnight in pot. They should double in size.
- Drain water and add 2 quarts of water back into beans along with Bone Suckin’ Habanero Sauce, vinegar, onion, red pepper and country ham. Bring beans to a rolling boil for about 2 minutes, then reduce heat to medium and continue to cook for 20 minutes, stirring occasionally. Turn off heat and cover beans; let sit for an hour. Taste to ensure beans are done.* Season with salt, pepper, an extra dash of vinegar and onions. Recipe serves 6.
Notes
*Dried beans, if fresher, hydrate faster and are quicker to cook. Older, dried beans have a longer cooking time, so it is important to taste the beans and check for doneness.
