Ingredients
  • Hot Bone Suckin’ Salsa, 1 cup
  • Bone Suckin’ Hot Seasoning & Rub, 1 Tbsp.
  • Bone Suckin’ Sweet Hot Mustard, 1 cup
  • Halibut Fillets, 4, 6 oz.
  • Olive Oil, ¾ cup (1 /4 cup for halibut and ½ cup for salsa)
  • Salt and pepper to taste
  • Anchovy paste, 1½ tsp.
  • Minced Garlic, 2 tsp.
  • Lemon, 1, zest and juice
  • Capers, 3 tsp., chopped
  • Black olives, ½ cup, chopped
  • Parsley, ½ cup, coarsely chopped
  • Grape tomatoes, 1 pint, halved
  • Rustic bread, 1 loaf, sliced 1 inch thick

Instructions
  1. Before cooking food, preheat grill to medium high. Coat the fish in Bone Suckin’ Sweet Hot Mustard and season with salt and pepper. Cook fish for about 3 to 4 minutes on each side or until fish is firm and cooked thoroughly. Place bread on the grill and char lightly. Set bread aside.
  2. While the Halibut is cooking, in a bowl, mix the anchovy paste, minced garlic, Bone Suckin’ Hot Seasoning & Rub, lemon zest and juice. Whisk and add in olive oil. Then add capers, olives, parsley and tomatoes and toss.
  3. Serve bread topped with lots of salsa and place fish on the plate. This is really very easy and quick. The Halibut can be substituted with any white, flaky fish. Recipe serves 4.
