Bone Suckin' Grilled Chicken and Plantains
Bone Suckin' Sauce Thicker Style, 1 jar
Chicken Breast, 4 boneless with skin
Plantains, 3 semi-ripe (yellow-black skin) cut on diagonal into 1/3 to 1/2 inch thick slices
Olive Oil (to baste Plantains)
Preheat grill to medium high heat and place aluminum foil over grill.
Pour 1/2 Bone Suckin' Sauce, Thicker Style over chicken breast, cover and chill for 30 minutes.
Grill chicken over medium-high heat for 8 to 10 minutes per side, basting with Bone Suckin' Sauce, Thicker Style.
Baste plantain slices with olive oil, sea salt and pepper and place them on the aluminum foiled part of grill. Cook plantains for 4 minutes per side.
Serve chicken over plantains and drizzle with the remaining Bone Suckin' Sauce. Serves 4.
