Place potatoes in a large pot filled with water, just covering the potatoes. Bring potatoes to a boil for 20 minutes. Make sure they are done to fork tender. Remove from heat and let cool to room temperature.
In a blender, pour Champagne vinegar, Earth Family Garden Veggie Dip Mix & Seasoning, Bone Suckin’ Sweet Hot Mustard, thyme and tarragon. Blend on high and slowly drizzle olive oil into top of blender.
When potatoes have cooled, cut in half or quarter. In a large bowl, add potatoes, sliced onions, roasted red peppers and feta. Pour the Champagne dressing over potato mixture and toss to coat evenly. Season with salt and pepper. Recipe serves 8.
